Cores are influenced negatively if the horse is hungry or dirty. These stats also increase up to a certain point, depending on the horse type, over time. Stable saddles are better because you can upgrade the stirrups and get the + speed/acceleration perks. Sadly, trapper saddles don't allow you to upgrade horns/blankets/stirrups. Stick with stable saddles if you want max horse stats. I`d also like to know. If trapper saddles don`t have benefits, would be a huge bummer.
